Comfort Food (And Carb Loading)

I don’t know when this became my go to comfort dish, because I definitely didn’t grow up eating it, but somewhere along the way I started craving this. It scratches the comfort itch. Big time.

Garlicy Buttery Cheesy Pasta

It is so simple. Boil water and cook pasta according to package. There are 2 tricks to cooking pasta well—use an insane amount of salted water (biggest pot you have filled up the whole way) and use a kitchen timer to time the cooking time. I chose linguini tonight and on the front of the package it says “cooks in 9-10 minutes”. So I set a timer for 9 minutes and drained immediately when it rang.

Anyway, to the sauce…

  • Garlic (as many cloves as you can handle. I like mine super garlicy and tonight I used 4 cloves)
  • Butter
  • Olive oil
  • Red pepper flakes
  • Parmesan cheese

Sautee the chopped garlic in olive oil for 3 minutes. Then add 2 T butter (comfort food is rarely healthy) and red pepper flakes.

When the pasta is ready, drain and put into the pan with another T of butter.

Toss the pasta with 1/2 cup freshly grated parmesan cheese. Finish with freshly ground black pepper and (my favorite) freshly ground nutmeg.
