Hearty, Healthy Cold-Weather Breaky
Once the cold weather starts creeping in, we like to change breakfast gears and head for the nice comfort of steel-cut oats. Steel-cut oats in the morning? Who has time for that (you may be thinking)? Well we don’t, which is why we make a nice vat of the stuff on Sunday night, and heat up a small portion each weekday morning as needed. You can add whatever you’d like, our favorite is cashews and raisins. What’s your favorite?
Steel-Cut Oatmeal with Cashews and Raisins (12 portions)
Method:
Combine the water and oats, bring to a boil (be careful, this overboils very easily!), and lower the heat to a simmer. Simmer covered for 45 minutes, stirring occasionally. If it seems to thin, remove the lid for a little while during cooking. If it is too thick, add more water. Add the raisins and cashews.
This stores well in the fridge for a week.
