Hilla, I hope we get more kale, but I feel like this might be the last of it. However, you can substitute other veggies for the kale–even leave it out, and make the “frittata” part with just cheese.
Alta, I’m sorry to hear you’re the lone Kale lover in your home, but we have a small Le Crueset pan that would be a perfect size for one (plus some leftovers of course). I hope you get to try it, everybody needs a good Kale fix!
